Courgetti Primavera

This recipe is a quick and delicious tea which is both healthy and very simple – exactly what is needed for many busy nights! It was made possible (or at least easier) through the use of  a julienne peeler, a vegetable peeler which cuts into tiny thin strips. This seemingly simple device was surprisingly difficult to source, but was ridiculously simple to use and I think it will get a lot of use now I have it!

The dish takes less than 10 minutes from raw ingredients to table and consists of many things you will likely have in your fridge anyway. It is also very filling, so if you are concerned that what is essentially a plate of vegetables will not fill you up, think again!

Ingredients:

– 2 courgettes
– a handful of frozen peas
– a handful of frozen sweetcorn
– a handful of fresh spinach
– 1 tbsp pesto
– 8 cherry tomatoes
– salt and pepper, to taste

Instructions

Using your julienne peeler or a sharp knife, cut your courgettes into thin ribbons. Add to a saucepan with the peas and sweetcorn, and cover with boiling water. Bring to the boil before draining (about 2 minutes total!)

Return to the pan and add the spinach. Cook for a minute, stirring to sweat out the spinach. If a lot of liquid appears, drain it out. Add the pesto, cherry tomatoes and seasoning and stir to heat through. Serve immediately.
